Pad Vegan Thai Donuts
2 cups all-purpose flour
3/4 cup turbinado sugar
2 teaspoons baking powder
1 teaspoon sea salt
1/4 teaspoon ginger
1/4 teaspoon cilantro
3/4 cup soy milk
1 teaspoon apple cider vinegar
2 tablespoons ground flax seeds
1/4 cup warm water
2 tablespoons vegan butter* melted and cooled
Preheat oven to 425 degrees Fahrenheit. Spray donut pan with Pam.
In a measuring cup, combine soy milk and apple cider vinegar. Set aside for 5 minutes.
In a large bowl, sift together flour, sugar, baking powder, salt, ginger, cilantro and flax seed.
Combine soy milk mixture and melted vegan butter. Whisk briefly.
Add warm water to dry ingredients mix gently. Make a well in the center of the mixture.
Pour soy milk vegan butter mixture. Mix until all ingredients combine.
Fill each donut cavity 2/3 full. Bake for 8-12 minutes or until doughnuts are golden brown and firm to the touch. You can insert a toothpick into a doughnut. If it comes out clean, the are done.
Let doughnuts cool in pan and then transfer to a wire rack to cool completely.
Cashew Lime Glaze
1/2 cup turbinado sugar
2 tablespoons lime juice
1/4 cup ground cashews
Mix all ingredients together. Have fun with this, experiment, taste and tease. Drip and drizzle over the doughnuts. After all eating is a sensual act.
